Pecorino cheese is a delight. It is well known for its hard and salty Italian flavor that is derived from sheep’s milk. Pecorino is often used on pasta dishes, like the better-known parmesan. Its distinctive aromatic and pleasantly sharp, salty flavour led to it being preferred in the preparation of Pesto sauce traditionally.
