Cold-smoked salmon is soft, tender, and nearly paper-thin to be readily used in all delicacies.  Has a rich, distinctive flavour, high oiliness and moist, medium-textured flesh. The edible skin can be left on. Can be prepared in a number of ways including steaming, baking, barbecuing, poaching and grilling.
